To me they don't look like Burlap, more a tone on tone with a tiny, even and all over speckle effect. Imagine if you took a blue fabric, placed burlap over it and spray painted a darker blue paint through the burlap so you had an impression of the burlap's holes on the original fabric. I take my stitches through the quilt top and the batting but not through the quilt backing so they're not visible on that side. On this quilt I used the quilt backing to bind the quilt - trim the backing larger than the quilt top and batting on all sides then fold the backing inwards and over the quilt top to create the binding.
